Banana Nut Oatmeal (From Scratch)

This morning’s breakfast was just so simple and so tasty that I had to share. It is warm, gooey and keeps me full until lunch. It’s great for a lazy weekend but easy enough for Monday morning, too. It’s supposed to snow tomorrow morning, so I might enjoy this breakfast again with a nice big, steaming cup of coffee.

Old Fashioned Oats (not instant or one-minute varieties)



Brown Sugar or Maple Syrup (real stuff only, please!), for sweetness

Prepare oats according to package directions. Toast walnuts in a pan, then chop. Slice banana. For a single serving, I use a half cup oats, about 3 tablespoons of walnuts and a whole small banana. Mix together in your bowl and finish with a sprinkle of brown sugar or a drizzle of syrup.

That’s it. It’s so simple that A and I even had time to read an extra story together today before we headed out to school. Can’t go wrong with such a simple and satisfying meal to start your day.
